A general rule of thumb for beetroot growth is up to 12 weeks for a full-sized root. Younger crops will be milder but can be harvested and cooked at 7-8 weeks. One beet seed may grow a few beet plants whereas one beet plant will produce one beetroot.
Full sun is preferred for beet plants. While they can grow in partial shade, you should completely avoid areas where they wouldn't get any direct sunlight. They also grow best in fertile soil with good drainage. You can enrich the soil with garden compost or manure before planting to help fertilise the area they will grow in.
Beetroot doesn't need a lot of watering unless the soil is dry. Young plants don't need as much water as those close to maturity. You can mulch and then water your beetroot every two weeks or so, just be gentle with younger plants that have shallow roots that can easily be disturbed.
Don’t worry, this isn’t a cause for concern. When beets grow, they can push out of the ground which reveals their bulbs. This is a good sign and means they are ready for you to harvest and include in some food!
